PreparationPre-heat the oven to 350°. Cook the sausage in a non-stick pan over medium heat until it is brown in color (no pink allowed!). Using a spatchula, break the meat up into small crumbled peices as it cooks. Put sausage aside to cool. Dice all the vegetables and cilantro into small pieces. Crack and whisk all 12 eggs in a large mixing bowl. Add the cooled sausage, vegetables and cilantro to the beaten eggs and season with pepper. Coat a cupcake tin with non-stick cooking spray and spoon the egg mix into each cup, filling slightly under the top of the cup. Bake for 20-25 minutes, or until the egg cups are slightly browned.
