If you love Asian food but don't love the bloating that comes along with starchy carbs and tons of sodium, try this Cauliflower 'Fried" Rice recipe to satisfy the craving without the repercussions. This recipe yields a large batch to enjoy with curries, grilled shrimp or even as a meal in itself. Ingredients
PreparationDice the vegetables into small pieces and mince the garlic. Place a large pan on a burner and begin warming the pan. Once hot, add the sesame oil. Saute the shallots, carrots, peas and garlic in the sesame oil for 4 minutes. Crack and beat the eggs in preparation to join the veggies. Now, push the veggies to one side of the pan and add the 4 beaten eggs. Scramble the eggs until they are no longer wet. Mix the veggies with the scrambled eggs and add 1 tbsp of soy sauce. Last, add the riced cauliflower, scallions and remaining soy sauce. Mix well and cook on low/medium heat for 7-10 minutes. Food For Thought...Using a food processor or grater to transform cauliflower florets into the consistency of rice can be messy and time consuming. Instead, look in your local health food markets for frozen or fresh cauliflower that is already riced for you. Also, if you like a little heat in your "fried" rice, finish the dish with some red pepper flakes or fresh chili paste. Enjoy! Nutrition Information
