Preparation![]() First, let's prep all the ingredients. Chop the chicken into chunky 1" pieces and season with a dry or herbs of choice. I used an "Everything" seasoning that includes onion powder, chili powder, garlic powder, sea salt, pepper, basil and paprika. An Italian herb seasoning would be great as well. Cut your sweet potato into similar sizes, drizzle with 1 tsp of Olive oil, a pinch of dried rosemary and salt/pepper. Dice the garlic and give the onion a rough chop. Last, slice thin rings of jalapeno and remove the seeds. Now let's cook. Heat a large saute pan over medium heat and add 1/2 tbsp of the olive oil. Add the chicken and cook for 8-10 minutes or until no longer pink inside. Remove from the heat and set aside. In the same pan, add the rest of the olive oil and sweat the onions for a few minutes. Now add the garlic and continue to cook down for a few more minutes. Season with salt/pepper. Add the seasoned sweet potatoes to the pan, cover and cook for 10-12 minutes or until the potatoes are tender. Be sure to stir occasionally to avoid scorching the vegetables. To save time and ensure tender potatoes, boil them for 5 minutes before seasoning and finish them in the pan. Last, add the chicken back to the pan with the jalapenos and sun dried tomatoes.
