PreparationFirst, wash all of your produce. You'll need a large mixing bowl or Tupperware to build the salad. Remove the the strawberry leaves, cut into quarters and add to the bowl. Add the rest of the washed berries as well. Finely dice about 6 mint leaves and add to the salad. You want the mint in small pieces so there are no overly minty bites. Now, juice one lemon. In a small separate bowl, whisk the honey and lemon together until mixed. Remember, you can always adjust the tart and sweet flavors of this dressing by increasing or decreasing the amount of lemon juice or honey. Dress the berries before serving and garnish with extra mint leaves for a pretty finish. Food For Thought...Fresh herbs are a healthy way to add flavor to all different kinds of dishes. The problem I used to run into with store bought herbs is the quantity in which they are sold. The bundles are too big and waste was inevitable.
