PreparationI suggest making the slaw and the dressing in separate Tupperware, a big one and a small one. This way you can keep the food fresh and crisp throughout the week. First up, slice and dice. The peppers, purple cabbage and snow peas should be cut in uniform inch long, thin pieces. Chop both ends off of the snow peas and slice them in thirds long ways for even pieces. Keeping the shapes symmetrical makes for a very pretty slaw! The scallions can get an easy quick dice. Add all of the slaw ingredients to the Tupperware and set aside. The dressing is just as easy. Combine all of the ingredients into the smaller Tupperware and whisk away. If the type of almond butter you are using is super thick, try running your whisk under hot water before going at it. Keep the slaw and the dressing separate until you are ready to enjoy. Then dress 1 cup of slaw with 1/2-1 tbsp of dressing and eat up!
