The flavors in Italian food are tantalizing. When a craving for the tang of tomato sauce and melted cheese enters the brain there's no escaping it. Listen to your body and enjoy those wonderful flavors in a healthy and balanced way. Meet your new best friend- Turkey and Tomato Meatballs. Ingredients
PreparationPreheat the oven to 350°. You will need a baking sheet with non-stick spray for the partial cook on the meatballs and a cupcake tin for keeping the tomatoes upright. If your tomatoes can stand up on their own, feel free to just use the baking sheet. Meatballs are up first: In a mixing bowl combine the turkey, onions, egg, parmesan, garlic, Italian herbs and most of the basil (leave a few pieces for garnish if you're feeling fancy). Now, form the mixture into balls using a 2" portion scoop or your hands to make 8, 1 1/2" meatballs. Place them on the baking sheet and cook for 10 minutes. Tomato time. Simply cut off the top of the tomato, score the interior with a knife and use a spoon to scoop out the inner juices and seeds. We want the inside of the hollowed tomatoes as dry as possible. Place all 8 tomatoes in holes in the cupcake tin. Back to the Meatballs. After 10 minutes they are only partially cooked. Remove them from the oven and place one ball in each tomato. Cover each meatball in 1 tbsp Marinara Sauce. Return to the oven for another 10 minutes. This is when your house starts to smell like an Italian restaurant so lucky for you, it's almost time to eat. Last step! Remove the meatballs from the oven and use any remaining Marinara Sauce on any meatballs that might have soaked up the moisture. Sprinkle 1 tbsp of Mozzarella on each meatball and finish them off with one more trip to the oven for 5 minutes. Remove them from the cupcake tin shortly after baking and garnish with the remaining basil. Grab a bowl and enjoy! Food For Thought...If you prefer your mozzarella on the browner side, turn your oven to broil for the last two minutes. Be sure to watch them closely because the broil setting can burn food very quickly. Broiling is a great tool as long as you are familiar with your stove's heat range. Nutrition Information
